I am the person who told you to contact Herbie. 
If you want to attract meat eaters do not name it something that puts meat eaters down but something that promotes veggies instead. Something like “earth’s food”, goodness from the earth, veggie power, etc. A friend of mine that ran veggie burger stalls in opposition to McDonalds had a clown at all her stalls called Reggie McVeggie instead of Ronald McDonald. You could name your stall hungry macks instead of hungry jacks. You could may be have a children’s clown named Mr green pea or something along those lines that will make children laugh. Maybe a potato gnome etc. (someone dressed as a gnome carrying baskets of potatoes). May be an earth worm eating veggies. Something that can appear at a lot of your stalls so you get known. May be a catch phrase along the lines “I made a pledge to eat more veg”. Get a pledge leaflet and ask kids to take the &quot;pledge to the veg&quot; which means to eat more veg. Later when you can afford it have badges made up saying &quot;I took the veg pledge&quot;. 
May be a large drawing of a child with the tummy filled with veggies and a statement like &quot;packed with veggie power&quot;. &quot;power for day long energy&quot;. &quot;Powert to play and have fun&quot;
Eating a rainbow should appeal to kids. List foods under colours at your stall and ask kids to eat a rainbow every day. 

As for snack foods the veggie sausages are not healthy. Most contain amounts of salt that are off the scale. They may be vegan but it does not mean they are healthy. However if they only eat them once in a while it is not too bad for them.

Some ideas are
1) Potatoes in the jacket with baked bean fillings, refried bean fillings, coleslaw, salsa etc. With refried beans add some chilli if desired and some onion, grated carrot, celery etc to make it go further and to taste better. 
2) Approach a wholesaler of vegan wedges and see how cheap you can get them. Some are made with vegetable oil. Put small amount in a tray with salad or salsa or baked beans. You could also do this with vegan hash browns
3) You could also approach makers of vegan spring rolls. And serve those with sweet and sour sauce and salad
4) A friend of mine ran a vegan stall sometime ago at a sports gathering. Her name is Diana Mitchell who runs the Squirrels restaurants. I helped her on the day and she had large bowls of sliced lettuce, tomatoes, slice avocado and pans of hot chilli beans and tacos in ovens. It was like a production line, just put lettuce and tomato in taco shell, add beans and top with avocado. These sold so well. Cut avocado at last minute so it does not discolour. 
5 In summer lovely trays of fresh salad and slices of freshly heated garlic bread. That is also a good seller and it was my favourite. Garlic Bread sells and the smell attracts people. 
6) Vegan risotto balls. Make up a stiff veggie risotto. Let go cold and then roll into balls and coat with bread crumbs. Fry and then heat or spray with olive oil and let them heat through in an oven. Pack with plenty of good veggies. 
7)  Papadums, CC’s or potato chips served with plenty of salsa. 
 8) Make up large lots of dips such as guacamole, babaganouch, white bean dips and various salsas. Some tomato salsa, some corn salsa, some mango salsa etc. Get pieces of Mountain bread and sell with any 2 salsas and dips of the persons choice. This appeals to many because of the choice factor. This can also be done with veggie pieces instead of bread. 
9) Falafels with tabouli.
10. Soup in a mug. Have a choice of several soups. Make up some garlic crutons, some herb crutons, etc and give them a choice of crutons with it.
11.Potato, pumpkin, herb, date scones etc. Heated with some margarine or jam on sweet scones. 
12. Garlic bread topped with salsa. 
13.Jaffles
14. Gourmet sandwiches. Make with different breads and some lovely fillings. Cold slices of roasted root veggies with a vegan pesto is nice. In winter bread rolls with hot roasted veggies and pesto. 
15. Whilst not very healthy some vegan hot dogs with different sauces and pickles. Let the customer choose sauce and pickles. The same with sausages. 
16. If you can hire a good juicer – fresh juice. 
17. Smoothies if you have the equipment
18 Air popped popcorn if you have the equipment.
19 Corn on the cob
20.Little bags of fruit and nut mix. 
21. If you have mini muffins trays make mini muffins with a savoury flavour and serve with soup or salad.
22. Home made veggies burgers. 
23 Little filo parcels stuffed with veggies and served with salsa or salad etc.
24. Bruschetta made on the spot.
25 Lovely fruit salads with grated coconut, or fresh strawberries or slices of fig. These items make it a bit different from the usual fruit salad.
26. For children vegan biscuits with vegan jelly beans on top, or glace fruits etc. Little vegan cakes with a half a slice of glace orange always look nice and different. 
27 For adults and good coffee maker with excellent coffee would help. Or a selection of gourmet teas with lemon slices. 
28. Large Jugs of Iced Teas in summer.
29. For children drinks that are half juice and half soda water seem to be appreciated.
30. Another type of salad that would be good is a barley or millet salad. With the millet fry it in a dry pan until it changes colour and gives off a toasty smell and then cook in the usual way. Once barley or millet is cold add plenty of chives (or finely sliced (onion) parsley, finely slice celery, some grated carrot, some chopped cornichons or other veggies of choice. Make it very veggie. Instead of mainly grain make it mainly veggie with grain. Give people a choice of dressings. This can be done a day or two before hand. Also another nice salad is to make up couscous with boiling tomato juice instead of water. Then when tomato juice is absorbed add parsley and other veggies. It is very nice done this way. These would be mainly for summer.
31. Tomato couscous as above but serve it hot with a lovely large scoop of veggie casserole on it for winter time.
32.If a barbeque serve chunks or capsicum, mushrooms, zucchini etc on kebab stick with some fried rice. You may need to experiment with the veggies and see if some need a small amount of precooking. Use different marinades.
33. Vegan fried rice with plenty of veggies. Serve in scoops with a bit of salad on the side or if you can get cheap spring rolls add a spring roll. 
34. Hot stuffed mushrooms. 
35 Pasta salads with plenty of veggies and a nice balsamic dressing. 
36 If you have cardboard trays some hot pasta in winter with a tomato sauce or some vegan pesto.
37 For children see if you can get some alphabet pasta.

I had Noosagranny post an item to the list for me recently. Due to cancer I became a paraplegic last August. I have finally got the nursing home to give me a vegan diet.  
This is from my facebook page. 

They said it could not be done but I have done it. 
As you know I became a paraplegic last August. I had to enter a care facility. I find I have more time for AR work, submissions etc.
 At the time I could not find a facility that catered for vegans even though some provided for vegetarians. Everyone said I would never get a facility to give me a vegan diet. 
However since I have been here there has not been too much I can eat so they finally got worried and sent a dietician to talk to me. I told her I was basically vegan so could not eat the cruel eggs, cheese etc. Much to my surprise she said apart from some free range eggs that she gets from a friend she is vegan. There was no pressure to force me to eat dairy or eggs. Her one request was that I take one multi vitamin each day, mainly for vitamin B12 and I can choose which multi vitamin I want. 

Today she brought me a meal plan to make sure I get enough of everything I need. They have worked out the meals for2 weeks and then the whole menu will be repeated every 2 weeks.
 They have given me a sheet with the protein, carbo, fat etc for each meal and a copy of the recipes so I know exactly what is in it. I couldn’t stop crying when they gave it to me as I felt so much relief and it is very like what I ate at home. No more sick stomach and no more guilty feelings because I ate a bit of cheese and no more hunger. They are now going to use this plan for any future vegans. So it can be done. 

Some examples are
 Breakfast
 Baked Beans on toast
 Vegan creamed corn on toast
 Tomato and avocado on toast
 Rolled oats made with soy milk and fruit
 Stewed fruit and toast
 Soy milk smoothie
 All on multi grain toast.
 
Morning teas always a fresh fruit
 
Afternoon teas. Fresh fruit, rice thins with peanut butter, tomato,
 beetroot, gherkins etc.
 
Lunch dessert
 Soy yogurt or fresh fruit.
 
Some of the meals for lunch and tea
 Vegan lentil curry
 Lentil pattie with roasted tomato sauce and salad
 Lentil burgers on multi grain rolls with houmous and salad
 Avocado, four bean and pasta salad
 Vegetable curry with nuts, and coconut milk
 Panzanella salad, (I absolutely love panzanella salad and they are making it with sour dough bread which I love )
 Stir fried veggies with cashews 
Bean and vegetable soup, 
Balsamic roasted vegetables
 Vegetable and chick pea soup
 Ginger tofu and cashews
 Vegan zucchini and mushroom slice
 Tofu in soy sauce with mushrooms
 Broccoli and tofu green curry.
 Brown rice, Pumpkin and seed salad.
 Vegan sausages with vegan onion gravy 
And so on.
 Dessert at night will always be fresh fruit salad.
 This is so much like I used to eat at home. I am so happy and feel
 more content with life already. They said it will take a day or two to get all the ingredients but by next week I will be completely vegan again.
 I will also get some little boxes of nuts and dried fruit, fruit
 juices etc as I want them.
 Success beyond my wildest dreams.
 It can be done. And the added bonus is the cook paid me a visit and said he admired my dedication to animals and it has caused him to think about animals being killed for food. Next month (May) it has been 30 years since I became vegetarian</description>

We have a sustainable living festival in town, and last year the fundraiser was a sausage sizzle, with local, organic sausages.  A bunch of us in the vegetarian eating group decided that this year we would do the food.  The organising committee was a little hesitant at first, but we convinced them to give us a try.  

We had felafels, vegie burgers and vegie sausages, fruit juice and mushroom empanadas.  We also all donated a homemade cake (my vegan cupcakes were a huge hit).  We cleared $2000 profit, as opposed to the $800 raised by the sausages last time.  The whole festival was vegetarian, almost vegan.  No-one asked us for meat, as there was plenty of variety.  We&#039;ll definitely be doing the food for the festival in years to come.

I hope you can raise more money, more ethically and with much greater variety and flavour.</description>
